Cinnamon, Peanut Butter & Chocolate Swirl Cookies

We had a couple of our dear friends call and ask if they could come by for a visit this evening, which we were happy for. However, since we hadn't planned on company I didn't have anything ready for snacking. So I whipped up a batch of cookies to help satisfy our sweet tooth. These are so easy to make and taste yummy.

Cinnamon, Peanut Butter & Chocolate Swirl Cookies

2 c. flour
1/2 tsp. baking powder
1/4 tsp. baking soda
1/4 tsp. salt
1/2 c. butter flavor shortening
1/2 c. peanut butter
1/2 c. sugar
1/2 c. packed brown sugar
1 egg
1/2 c. milk
1/4 tsp. ground cinnamon
1 c. chocolate swirl baking chips

Preheat oven to 375*

Sift together flour, baking powder, baking soda & salt into a large mixing bowl. Add in peanut butter and shortening. Mix until blended, mixture will be grainy in texture. Blend in sugars. Add egg and milk to batter and mix until well blended and smooth. Add in cinnamon & stir to incorporate. Fold in chips.

Drop by rounded tablespoonfuls onto a greased, parchment paper or silpat lined cookie sheet. Bake at 375* for 12 minutes or until golden.

Makes about 3 dozen cookies.
