There's A Surprise Inside


Having lots of shredded zucchini in the freezer, I wondered how I might use it in a way that I hadn't tried before. Since Hubby is a seafood fan and I'm only partial to crab, I thought why not make a version of the crab cake but with zucchini instead. Let me tell you, we were all surprised at how this turned out. It actually tasted just like crab! Go figure. As I was shaping them into patties I was shocked at how the texture actually felt like crab too.

Crab Cake Surprise
2 Tblsp. grated onion
1 celery rib, diced
1 small bell pepper, diced
1 Tblsp. mayonnaise
1 Tblsp. Worcestershire sauce
1 Tblsp. Old Bay seasoning
4 c. shredded zucchini
2 eggs
2 c. soft bread crumbs
3 Tblsp. butter or margarine



In a mixing bowl, combine onion, celery, bell pepper, mayo, Worcestershire, Old Bay and eggs. Stir to mix well. Drain zucchini and press as dry as you can with paper towels. Add dry zucchini to the mixing bowl. Blend well. Lightly toss bread crumbs into the seasoned zucchini mixture. Be careful to not over mix the bread crumbs.


In a non-stick skillet, melt butter. Shape zucchini mixture into patties, at least an inch thick. Fry patties in the butter until golden on both sides. Serve hot.
