I figured since we were having homemade Italian seasoned bread with freshly made butter, I would follow through on the Italian theme with our main course and prepare Beef Lombardi. This casserole was so easy to make and taste wonderful. Everyone went back for seconds.
Beef Lombardi
1-lb. ground beef
1 (14-oz) can diced tomatoes
1 (10-oz) can diced tomatoes with chilies
1 (6-oz) can tomato paste
2 tsp. sugar
salt & pepper to taste
6-oz. wide egg noodles
1 c. sour cream
1 c. grated cheddar cheese
1 c. grated mozzarella cheese
1 c. grated Parmesan cheese
In a medium size skillet, brown meat until no longer pink. Drain fat. Return meat to skillet, then add in tomato products, sugar, salt & pepper.
Bring to a bubble for 5 minutes. Cover & lower heat to simmer for 30 minutes.
Meanwhile, prepare noodles according to package directions. Once cooked, drain and pour into a 9x13" casserole dish. Stir sour cream into hot noodles.
Pour meat mixture over noodles & sour cream. Spread evenly. Top with cheeses.
Place a cover of aluminum foil over casserole and bake in a 350* oven for 30 minutes, or until cheese is melted.

This sounds so good! And all the recipes do! The bread and butter makes me want some! YUMMY! I'll have to try the cream cheese banana bread! I haven't ever used cream cheese in anything that it didn't turn out great! Hope you have a great day!

Since the weather is warming up I was curious if you ever mix the noodles, cheese, sour cream and meat mixture together on the stove top and let the cheese melt that way instead of baking.
