Slow Cooking Thursday - Country Style Ribs



I am participating in my first ever SCT "Slow Cooking Thursday" meme. Sandra has been hosting this for some time now over at The Diary of a Stay Home Mom but I am just now getting a chance to join in on it.

One of hubby's favorite meat dishes are bar-b-que pork ribs. Instead of firing up the grill or the big smoker, I make mine in the crockpot. Hubby just loves them when I make it. So in honor of him (and thinking along the lines of Love Dare Day 2,) I am preparing these for dinner tonight.

Crockpot B-B-Q Country-Style Pork Ribs
4.5 lbs. Country-style pork ribs
1 onion sliced
3 cloves garlic, minced
1/3 c. apple jelly
2/3 c. bar-b-que sauce

Spray a 4-6qt. crockpot with Pam or other non-stick cooking spray. Place ribs, onion and garlic into crockpot.

Cover & cook on LOW for 8-10 hours.

Once cooking time has elapsed drain juices and discard onion and garlic. Place ribs back into crockpot. In a small bowl combine apple jelly and bar-b-que sauce. Brush mixture over ribs coating well.

Place cover back on crockpot and cook on HIGH for about 30 minutes or until sauce has made a glaze over meat.

It seems like every type of ribs I get have so much fat on them - does that happen to you?

Okay, I got all caught up on your older posts...Love Dare, etc. Keep up the good work. I did find the first ones to be easy too. Heck, I think I patted myself on the back a few times saying how good of a wife I already was and how easy this dare would be because I was already doing some of these bare essentials. ;) Well, as you know, I got challenged along the way, more introspectively than anything else. God sure speaks to us in different ways, doesn't he? Convicting us in many areas...

Anyway, I digress. :) I pray your journey will be VERY smooth and without bumps.

I did find the same thing to be true when I bought store bought pork ribs concerning having too much fat on them. So I decided I would go to the meat market and see what theirs looked like. Let me tell you they are all meat! I would even go out n a limb and say they only have about 5-8% fat on them total. It's not really that much more in price to buy from the meat market as you are paying for mostly meat and not fat. So this is where I buy ours when the notion strikes that we are in the mood for them.

This recipe sounds so good. I usually do not make ribs because I always thought they were too much trouble. But this recipe looks very simple. I'm so glad you are participating in Slow cooking Thursday!
