Sausage & Potatoes In A White Sauce

Matthew 6:25-26 "Therefore I say unto you, Take no thought for your life, what ye shall eat, or what ye shall drink; nor yet for your body, what ye shall put on. Is not the life more than meat, and the body than raiment? Behold the fowls of the air: for they sow not, neither do they reap, nor gather into barns; yet your heavenly Father feedeth them. Are ye not much better than they?"

This was adapted from the Kielbasa & Potato recipe found in "Simple Joys of Friendship" from Gooseberry Patch. I decreased some of the ingredient amounts to help stretch our meat and budget.

Sausage & Potatoes In A White Sauce
4 potatoes, peeled & cubed
1 lb. link beef sausage, sliced into 1" rounds
1 c. shredded cheddar cheese
1/2 c. grated parmesan cheese

Sauce:
2 Tblsp. butter or margarine
1 Tblsp. cornstarch
salt & pepper to taste
1 c. milk

To make sauce:

In a small saucepan melt butter over medium heat. Whisk in cornstarch, salt & pepper. Continue whisking and slowly add in milk. Let mixture come to a boil for about 2 minutes while stirring continually. Add to sausage mixture.




Cook potatoes in boiling water until fork tender. Drain. In a large dutch oven combine potatoes, sausage, shredded cheddar & sauce. Heat mixture over low heat until cheese is melted and sausage is heated through. If mixture is too dry add in a little more milk. Remove from heat and stir in grated parmesan.
