Pear Bread


We were given a blessing of some fresh pears from a sweet friend of ours the other day. I thought about making some preserves with them but, instead decided to make some bread for tonight's desert.

Pear Bread
3 c. all-purpose flour
1/4 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 T. cinnamon
1/8 tsp. nutmeg
1/4 c. brown sugar
3/4 c. vegetable oil
3 eggs
2 c. white sugar
2 c. peeled chopped or shredded pears
1 c. chopped pecans (optional)
2 tsp. vanilla extract

Preheat oven to 325*

Grease and flour two regular size (8x5-inch) bread loaf pans. Set aside.

In a large mixing bowl combine flour, baking powder, baking soda, salt, cinnamon, nutmeg and brown sugar.


In a medium size bowl combine oil, eggs, sugar, pears, pecans, and vanilla. Blend well.


Add to dry ingredients. Stir until just moistened.


Pour batter evenly into prepared loaf pans.


Bake for about an hour or until toothpick inserted in center comes out clean. Cool on wire rack before removing from pans.
