Banana Bread

While perusing the local Farmer's Market yesterday, I happened upon the discount counter that had buckets of bananas marked for $1.00 a basket. I immediately knew I wanted them. So for $2.00 here is what I got...

What better to do with these yellow skinned beauties than to make some banana bread. The recipe below is for a normal one loaf batch. However, since I had so many bananas I increased my measurements to make 5 batches in one.

Banana Bread
2 c. flour
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1/2 c. butter
1 c. sugar
2 eggs, beaten
3 bananas, mashed
1/2 tsp. vanilla extract

Preheat oven to 350* Grease a 9"x5" bread loaf pan. Set aside.


Remove skins from bananas.


In a large mixing bowl place, combine all ingredients until well blended. Pour mixture into prepared loaf pan. (Since I was making such a large batch, I could not use a regular mixing bowl to hold all the batter. Instead I lined a clean medium size metal tub with a clean trash bag. This worked perfectly. Never think you are limited by the size of your bowl or pans. There is always a way around things if you look hard enough.) Tap bottom of pan lightly on counter to release any air bubbles trapped inside batter.

Place in preheated oven and bake for 45 minutes to an hour, or until knife inserted in center comes out clean and top is golden.


Let cool in pans for about 5 minutes then remove to a wire cooling rack to completely cool.


**You can also add chocolate chips or chopped nuts to the batter before pouring into bread pan if desired.

For an alternate recipe, try a batch of Cream Cheese Banana Bread. It's out of this world. I didn't have cream cheese on hand otherwise I would have made a few loaves of that version as well.

You may already know, but bananas also freeze very well. I got bags of bananas at the Grocery store a couple of weeks ago for $0.10/lb. I made two double batches of banana bread and froze the rest of the bananas. I froze about 4 bananas per bag. I also thaw these and puree them for my 6mo old. Way cheaper and healthier than store baby food!

Oh My! Your bread and muffins look SOOO yummy to me right now. I've been wanting banana bread lately. Yesterday, I popped into a local grocer to pick up a couple items. I saw a huge batch of VERY ripe bananas and was immediately excited. I thought I'd go home and make banana nut bread. Imagine my disappoinment when those VERY ripe were priced the same as the slightly green bananas. Needless to say, I didn't purchase the bananas but returned to our little temporarty home away from home and baked oatmeal cookies (I already had all the ingredients in the pantry).

Again, I think your bread and muffins look so very yummy! I'm hoping I'll get to make some soon.

Mrs.Storey ~ Oh I love it when I get a discount on things like this. I freeze them too. It makes it so much nicer during those sweet tooth times when you can simply pull ingredients out of the freezer and in a short time whip up something to satisfy those cravings. Best yet, you didn't have to run to the store and pay anything more out of pocket.

Ronda ~ I am glad to hear from you. Things are fine in our neck of the woods....just busy with end of summer back to school things. But it's all good.

Mrs. B ~ Those oatmeal cookies sound tasty. You know, I never really liked them growing up but I guess our tastes change as we age. I find I like them much better now than in years past. Looking forward to the updates once you get settled back home.

Wow, those goodies sure do look yummy! I love finding a bargain like that! I found a great deal on bananas not long ago. We made homemade banana ice cream :) Soooo good!

What a wonderful find! And Oh my I can smell that yummy banana bread here, via the pictures! It really is a warm and comforting feeling! You did awesome. Love how you baked them up in all different sizes too! Hope yall enjoy them!
