Prepping Zuchinni


It was a good day in the kitchen this morning. I was able to work up several of our fresh picked zucchinis to freeze for later use. I shredded and measured them out so that I could easily thaw them and use them in my favorite bread recipe.


Update ~ We had more zucchini harvested, so after it was all shredded or sliced up for freezing we ended up with 30 cups shredded & 7.5 lbs sliced.

I wish I had known that you could freeze zucchini that way. I kept busy doing all kinds of recipes to use ours as they came in.
